Protein Punches
I actually came across this idea from Abby Howard from Matt and Abby (https://www.youtube.com/@MattandAbby) in an Insta story and it just seemed like the perfect thing, except for the chocolate chips. One thing about me, I LOVE chocolate, so I set off in a late-night pursuit of a recipe for vegan, homemade chocolate chips. Thanks to the wonders of the internet, a short 30 minutes later, I had my vegan chocolate tucked away in the freezer. The next day I made these. And wow.
1 cup oats (link to the ones I use)
1/2 cup vegan chocolate chips (these are a great option or you can use the recipe I did— not perfect, but works!)
1/2 cup flax seeds (I got them at the store, but they are WAY cheaper on Amazon)
2/3 cup penut butter — I think crunchy works better in the recipe, but I have friends who are creamy pb purists
OPTIONAL(!!!) 2 Tbs honey
Directions:
throw all that in a bowl and mix mix mix until it’s all evenly distributed
refrigerate (not a specific amount of time, just til firm enough to shape. I did 1.5 hours)
shape into balls
freeze!
